Coconut Omelet


1 tablespoon coconut oil
4 egg whites
1 whole egg
4 drops natural vanilla extract
1 tablespoon unsweetened coconut flakes
½ cup strawberries

* Heat the oil in a medium skillet over medium heat.
* In a medium bowl, beat the egg whites and whole egg with the vanilla
and coconut flakes. Poor into the skillet and cook until lightly browned
on both sides. Serve with the strawberries.
